There is nothing nicer than Friday morning baking! For anyone that enjoys baking, you would agree with me, that there is something gratifying about being able to make something out of nothing. It's the very notion & concept of creation. I blame it on the creative side of my brain!
These banana chocolate muffins have been homemade with love for a family I so dearly care about. I hope it brings a moment of happiness to their day!
2 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon ground cinnamon
2 ripe bananas, mashed
3/4 cup light brown sugar
1 cup unsalted butter, melted
1/4 cup milk
1 cup milk chocolate chips
1/4 cup dark chocolate chips
Preheat oven to 180 Celsius degrees. Line muffin tin with baking cups, try and keep them fun & colorful. In a medium bowl, whisk together flour, baking powder, salt and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
Divide batter evenly between prepared cups, leaving a little space for them to rise. Sprinkle a few extra chocolate chips on the top of each muffin, and then bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.
